Appellation: Protected Geographical Indication Lesvos
Varietal Composition: 100% Chidiriotiko grapes
Production Techniques: Five-day prefermenation maceration, followed by two-week fermentation at 24° C. Ageing in French oak barrels for four months.
Characteristics: Ruby color. Complex, peppery bouquet with tones of dry roses and forest fruit. Lightly oaky. Distinct, earthy minerality, stemming from the volcanic soil of western Lesvos where the vines are grown.
Serving Suggestions: Serve at 16° C with lamb, pizza and all kinds of Mediterranean cuisine, western and oriental sweet and sour dishes, shellfish and crustaceans, as well as chocolate and chocolate-based confections.
